| baking powder | 15 as needed |

In a large bowl, add the quark. Preheat the oven to 190°C (375°F).

Add the flour. I used organic whole grain spelt flour — it’s very healthy with a low glycemic index.

Add 15g baking powder and salt.

Mix all ingredients together and gently press into a dough. Do not overwork or knead back and forth.

Transfer to a work surface and flatten with your hands.

Prepare assorted seeds. I used organic flaxseeds and organic pumpkin seeds — both are excellent sources of protein and healthy fats.

Scatter the seeds on the work surface, then press the dough onto them, coating both sides with seeds.

Use a bench scraper or knife to cut the dough.

Cut into 6–8 portions.

Place in the oven and bake for 25–30 minutes.

Done! Crispy on the outside, just like what you’d find in a German bakery — and very nutritious.
