A delicious Quinoa Pancakes with Salmon Salad recipe.



Prepare the quinoa pancakes — cut them into rectangles. Round shapes would look more like tacos, but rectangles work fine for convenience.

Place the pancakes on a wire rack. Preheat the oven to 180°C (fan mode) and warm for 3 minutes. An air fryer works too.

For the sauce, mix Greek yogurt with honey mustard. Add diced onion if you like — it’s optional.

Flake the salmon. Assemble like a Peking duck wrap: layer a pancake, then salmon, then sauce. Delicious!
