A delicious Home-Style Braised Fish Roe and Swim Bladder recipe.

Rinse the fish roe and swim bladder thoroughly. Bring a pot of water to a boil, blanch them briefly, skim off any foam, then remove and set aside.

Prepare the aromatics: Sichuan peppercorns, star anise, fennel seeds, angelica root, and dried chili peppers, along with scallion, ginger, and garlic (smash the garlic cloves). Heat oil in a wok and stir-fry everything until fragrant, then add water and bring back to a boil.

Once boiling, add the fish roe and swim bladder. Pour in dark soy sauce and a generous amount of rice vinegar (at least half a ladle of the large soup-ladle kind). Cover and simmer for a while to let the flavors penetrate.

When nearly done, season with salt, a pinch of sugar, chicken bouillon powder, and MSG. Toss in cilantro for freshness and drizzle a little sesame oil before serving.
