Cod and Tofu Stew

  • 2 scallion
  • 3 ginger slices
  • 4 dried chili peppers
  • 1 light soy sauce
  • 3 sugar
  • 5 salt
  • 4 white pepper powder
  • 2 matsutake powder
  • 1 cooking wine

Instructions

  1. Clean the cod and cut into sections. Cut the tofu into cubes.
  2. Bring a pot of water to a boil, add 1 tbsp cooking wine. Once boiling, add the cod and blanch for 30 seconds, then remove and set aside.
  3. Heat oil in a wok over high heat. Add scallion, ginger slices, and dried chili peppers; stir-fry until fragrant.
  4. Add boiling water to fill the wok halfway and bring back to a boil.
  5. Add the cod and tofu, 1 tbsp light soy sauce, 3g sugar, and 5g salt. Simmer over medium-low heat for 20 minutes.
  6. Just before finishing, add 4g white pepper powder and 2g matsutake powder.
  7. Done — the broth is rich and savory!
