Homestyle Stir-Fried Mixed Vegetables — One Wok, Endless Flavor

Description

A colorful stir-fry of multiple vegetables cooked together in one wok. Simple, healthy and full of texture.

Ingredients

  • Bean sprouts (100g)
  • Leek (50g)
  • Eggs (2)
  • Glass noodles (50g)
  • Dark soy sauce (1 tbsp)
  • Salt (To taste)

Instructions

  1. Soak glass noodles in warm water, drain. Beat eggs.
  2. Heat oil, scramble eggs until just set, remove.
  3. In the same wok, stir-fry bean sprouts and leeks for 1 minute.
  4. Add glass noodles, soy sauce and a splash of water.
  5. Stir-fry until noodles are tender and vegetables are crisp-tender.
  6. Return eggs to the wok, toss everything together. Serve immediately.
