A delicious Homestyle Stir-fried Spicy Chicken recipe.

Prepare chicken leg meat, or you can use a whole chicken. This time I only used a portion.

Cut the chicken into small pieces. Prepare a bowl of dried chili peppers, cut scallions into small segments, slice the ginger, peel one bulb of garlic, and set aside a small pinch of Sichuan peppercorns.

Add one egg, 2 tbsp light soy sauce, 2 tbsp Shaoxing wine, 1/2 tsp white pepper, 1 tbsp chili powder, and a small tsp of salt to the chicken pieces. Mix well.


Heat oil in a wok to medium (about 150-160°C). Add the chicken pieces and deep-fry until golden. Remove, then reheat the oil and fry the chicken again for another 30 seconds for extra crispiness.

Remove and drain the oil. If you prefer a darker color, you can add an extra tablespoon of dark soy sauce!

Leave a thin layer of oil in the wok. Add dried chili peppers, Sichuan peppercorns, ginger slices, garlic, and the white parts of the scallions. Stir-fry over low heat until fragrant.
