  1. Japanese Curry Chicken Rice
    Step 1

    Dice the chicken (not too small). Add cooking wine, soy sauce, and ginger slices; toss and marinate for a while. Add cornstarch and mix well again. Cut the potatoes and carrots into small chunks and set aside.

    Heat oil in a pan and stir-fry the chicken for a couple of minutes.

    Add the onion, potato, and carrot; continue stir-frying.

    Add hot water and simmer for about 10 minutes. When the potatoes are cooked and the liquid has mostly reduced, add the curry roux blocks.
