A delicious Japanese-Style Yam and Pork Patties (James Kitchen) recipe.

Make the yam pork mixture: Peel and grate the Chinese yam into a paste. Finely chop the white onion. Combine with ground pork, add a little minced ginger, 1 egg, a pinch of salt, pepper, sesame oil, and cornstarch. Mix well until evenly combined.
Pan-fry the patties: Heat a little oil in a pan. Shape the meat mixture into bite-sized patties and place them in the pan. Fry until golden on one side, then flip and cook through until fully done. Transfer to a plate.
Make the teriyaki sauce: In a saucepan, combine 25ml Japanese soy sauce, 25ml mirin, 150ml water, a little sugar, and a cornstarch slurry. Stir well and cook until thickened. Drizzle over the yam pork patties, then garnish with chopped shiso and onion.
