Julienne the cucumber, sprinkle with salt, and let it sit for a moment. Squeeze out the excess water and set aside. Drain the canned tuna, reserving the olive oil — you’ll need it later.

Add the corn kernels, a pinch of black pepper, and low-fat mayonnaise to the tuna. Mix well and set aside.

Mix the cooked mixed grain rice with the seaweed sesame sprinkles and a drizzle of the reserved olive oil.

Cut the seaweed sheet into four pieces. Place a layer of rice on each piece, add cucumber strips and the tuna mixture, then fold diagonally into a triangle and press firmly to seal.
