Moo Shu Pork (Quick & Easy)
Ingredients
- as needed wood ear mushrooms
- 1 cucumber
- 1 carrot
- 1 pork belly
- 2 eggs
- 1 scallion
- 1 ginger
Instructions
- Soak wood ear mushrooms until rehydrated, blanch in boiling water, and set aside.
- Slice the pork belly, carrot, and cucumber. Cut the scallion and ginger into thin strips.
- Heat a wok over high heat with cold oil. Crack in the two eggs, scramble, and transfer to a plate.
- Add more oil to the wok. Toss in the scallion and ginger, stir-fry briefly. Add the pork belly and stir-fry. Drizzle in soy sauce to taste and stir-fry.
- Add the carrot and stir-fry; add the cucumber slices and stir-fry; add the wood ear mushrooms and stir-fry. Drizzle in more soy sauce, then pour in a generous amount of cornstarch slurry (with salt) and stir-fry until the sauce thickens.
- Return the scrambled eggs to the wok, toss everything together, and transfer to a serving plate. Moo Shu Pork is ready!
