Slice 250g of pork shoulder (梅花肉 yields tender meat). Add 1 tsp salt and mix thoroughly until the meat feels slightly sticky (about 1 minute). Add a small amount of peanut oil and mix briefly — this seals in the meat’s moisture.

Bring a pot of water with ginger slices to a boil. Add the pork first. Once the pork is cooked through, add the mulberry leaves and bring to a boil again.

Finally, add your preferred noodles, rice noodles (河粉/米粉). Tip: cook noodles in plain water first and drain; for rice noodles, rinse briefly with hot water. Do not cook noodles/rice noodles directly in the broth — this keeps the soup clearer and cleaner. Note: Those with weak digestion should consult a doctor before consuming mulberry leaves.
