Pan-Fried Cumin Tofu

Ingredients

  • 1 tofu
  • 1 salt
  • 0.5 chicken bouillon or MSG
  • 0.5 pepper
  • 0.5 Sichuan pepper powder
  • 2 cumin powder
  • 1 chili powder

Instructions

  1. Prepare a block of tofu and slice it like this.
  2. Heat the wok and add cold oil — not too much. Swirl to coat the bottom evenly to prevent sticking.
  3. Turn to low heat and add the tofu slices one by one.
  4. Turn up to medium-high heat and pan-fry until both sides are golden.
  5. Once all the tofu is fried, transfer to a bowl. I fried mine in two batches.
  6. Turn off the heat — this is important! Add the fried tofu back to the wok. Season with: 1 tsp salt, 0.5 tsp chicken bouillon, 0.5 tsp pepper, 0.5 tsp Sichuan pepper powder, 2 tbsp cumin powder, 1 tbsp chili powder. Once all seasonings are in, turn the heat back to low — low, low! Gently toss the tofu.
  7. Toss until the tofu is evenly coated with the seasonings — about 6 seconds and it is ready to plate.
  8. Take a bite — even with less oil and salt, it tastes great!

Common Questions

How can I make this spicier?

Add chili oil or chili crisp to taste, or include dried red chilies during cooking. A dash of Sichuan peppercorn adds a different kind of heat.
