Ingredients
- bok choy or leafy greens — 1 bunch
- pork (lean) — 200g
- scallion and ginger — some
Steps
- Slice the pork thinly and place in a bowl. Season with white pepper powder, 1 spoonful of salt, and 1 spoonful of chicken bouillon. Pour in scallion-ginger water and mix well to absorb. Add another round of scallion-ginger water and mix again. Set aside to marinate for a while.
- Bring a pot of water to a boil, then reduce to low heat — keep it at a gentle simmer (bubbling but not rolling). Slide the marinated pork slices in one by one.
- Once all the pork is in, turn the heat up slightly. Wait about 30 seconds, then gently push the pork around with a spatula so it cooks evenly. Wait another 20 seconds, then add the greens.
- The greens will be done in about 20 seconds — serve immediately. Garnish with chopped scallions if you like.
- For a dipping sauce: combine minced ginger and garlic, oyster sauce, steamed fish soy sauce, and a ladle of hot broth from the pot.
