A delicious Pork and Scallion Soup Dumplings (Xiaolongbao) recipe.
Prepare the dough: mix flour with warm water, knead until smooth, cover and rest for 30 minutes.
Make the soup filling: dissolve gelatin in pork broth (or prepare pork skin broth), refrigerate until set, then cut into small pieces.
Prepare the pork filling: combine ground pork with minced scallions, ginger, soy sauce, sesame oil, salt, sugar, and white pepper. Mix in one direction until sticky.
Divide the dough into small portions, roll each into a thin round wrapper with slightly thicker center.
Place filling in the center of each wrapper, pleat and pinch to seal tightly at the top.
