A delicious Preserved Plum Braised Pork Ribs recipe.



Gather preserved plums, rock sugar, ginger slices, star anise, cinnamon stick, bay leaves, and rice cakes.


Place ribs in cold water, add the aromatics trio (scallion, ginger, cooking wine) and blanch for 3 minutes. Remove and drain.


Leave a little oil in the pan, add a small handful of rock sugar and slowly melt it over low heat.




Add the ribs and quickly stir-fry to coat evenly in the caramel. Add 2 tablespoons light soy sauce.



Stir-fry evenly, then add the prepared aromatics (preserved plums, ginger, star anise, cinnamon, bay leaves).
Cover and simmer over medium-low heat for 25 minutes. Uncover, add rice cakes and continue braising for 5 minutes. Finally, reduce the sauce until thick and glossy.
Ribs + preserved plums + rice cakes — an amazing combination! The sauce over rice is absolutely divine.
