A delicious Quick-Boiled Sliced Lamb (or Pork) recipe.

Slice the meat thinly across the grain. Coat with egg white and cornstarch to velvety.


Heat a wok with cool oil. Add flour and stir-fry until golden. Pour in boiling water, add scallion and ginger. Bring to a boil and simmer for a while, then remove and discard the scallion and ginger.

Dissolve white pepper powder in a little cold water, add vinegar, and set aside in a serving bowl.
Bring a pot of water to a boil. Add the sliced meat and separate the pieces with chopsticks. Cook until done, then transfer to the serving bowl with the pepper-vinegar mixture.

Season the broth to taste, add Sichuan peppercorn oil, and pour over the meat. Garnish with chopped scallions and cilantro. Serve immediately.
