Scallion Stir-fried Pork Belly

Ingredients

  • 250g pork belly
  • 1 scallion (large)
  • 3 garlic
  • 2 light soy sauce
  • 0.5 dark soy sauce
  • a pinch sugar
  • a pinch chicken bouillon
  • a splash cooking wine

Instructions

  1. Prep: Remove skin from pork belly and slice thinly. Cut scallion diagonally into segments. Mince garlic.
  2. Add pork belly to a cold wok and render out the fat over medium heat until lightly golden and crisp. If there is too much rendered fat, pour off the excess.
  3. Splash cooking wine around the edge of the wok. Add minced garlic and stir until fragrant.
  4. Add half of the scallion and stir-fry until fragrant. Add 2 tbsp light soy sauce, 0.5 tbsp dark soy sauce, a pinch of sugar and chicken bouillon. Toss everything evenly.
  5. Add the remaining scallion and continue stir-frying. Adding scallion in two batches creates more layered flavor.
  6. Plate and serve.
