| Salmon fillet (smoked or plain) | 1 as needed |
| Day-old rice | 2 as needed |
| Salt | a pinch |
| Eggs | 3 as needed |
| Chili pepper | 1 as needed |
| Bird's eye chili | 1 as needed |
| Baijiu (Chinese white liquor) | a splash |
| Soy sauce | 2–3 |
| Sugar | 1 as needed |

Lightly pan-sear the salmon fillet, then remove the skin. Flake the flesh into small pieces and stir-fry with butter and garlic until fragrant. Set aside.

Heat oil in a wok and stir-fry the chili peppers until fragrant. Add the flaked salmon.

Stir-fry everything together, season with a pinch of salt and a splash of baijiu.

Set the cooked salmon mixture aside.

Beat 2 eggs and mix with the day-old rice, making sure every grain is evenly coated.

Heat oil in the wok, add the egg-coated rice, and stir-fry continuously until evenly distributed.

Add the reserved salmon mixture back in and stir-fry to combine. Season to taste.

Top with a fried egg of your preference and serve!
