Ingredients

  • 200 beef
  • 8 garlic scapes
  • 1 ginger
  • 3 garlic cloves
  • 5 Thai chilies (xiaomila)
  • 1/2 light soy sauce
  • 1/2 oyster sauce
  • to taste black pepper
  • 1 cornstarch
  • 1/2 dark soy sauce
  • to taste salt

Instructions

  1. Slice the beef and add 1/2 tbsp light soy sauce, 1/2 tbsp oyster sauce, black pepper to taste, and 1 tbsp cornstarch. Mix well until evenly coated. Add 1 tbsp oil and marinate for 20 minutes.
  2. Heat oil in a wok. Add the beef and quickly stir-fry until it changes color, then remove and set aside. Add minced garlic, ginger, and Thai chilies to the wok. Sauté until fragrant. Add the garlic scapes and stir-fry until tender. Return the beef to the wok. Add 1/2 tbsp light soy sauce, 1/2 tbsp dark soy sauce, 1/2 tbsp oyster sauce, 1/2 tbsp chili powder, and a pinch of salt. Toss to combine and serve.
