A delicious Stir-Fried Lotus Root Tips with Beef recipe.

Slice the beef thinly against the grain. Marinate with light soy sauce, cooking wine, and starch for 15 minutes.

Cut the lotus root tips into diagonal slices. Mince the ginger and garlic, and cut the green onion into segments.
Heat oil in a wok over high heat. Stir-fry the marinated beef until just cooked through, then remove and set aside.
In the same wok, add a little more oil. Sauté ginger, garlic, and the white parts of the green onion until fragrant.
Add the lotus root tips and stir-fry over high heat for 1-2 minutes until crisp-tender.
Return the beef to the wok, toss everything together, season with salt to taste, and serve immediately.
