Super Tender Beef Stir-Fry

Ingredients

  • 1 soy sauce
  • ½ oyster sauce
  • 1 cornstarch
  • a pinch baking soda
  • 1 egg white
  • a little water

Instructions

  1. Choose a fresh piece of beef with no sinew. Cut across the grain — never with the grain!
  2. Add cornstarch, oyster sauce, baking soda, a splash of soy sauce. I also added a little Shacha sauce.
  3. Add a splash of water and mix well by hand until the meat has absorbed the water — like it's "drunk full".
  4. Add an egg white and mix thoroughly. Make sure the egg white is fully dispersed.
  5. Finally, coat with a little oil to seal. Give it a toss before stir-frying.
  6. Stir-fry until the beef just changes color, then immediately remove from the pan. Super tender!
