Super Tender Beef Stir-Fry
Ingredients
- as needed beef (tender cut, no sinew)
- 1 soy sauce
- ½ oyster sauce
- 1 cornstarch
- a pinch baking soda
- 1 egg white
- a little water
Instructions
- Choose a fresh piece of beef with no sinew. Cut across the grain — never with the grain!
- Add cornstarch, oyster sauce, baking soda, a splash of soy sauce. I also added a little Shacha sauce.
- Add a splash of water and mix well by hand until the meat has absorbed the water — like it's "drunk full".
- Add an egg white and mix thoroughly. Make sure the egg white is fully dispersed.
- Finally, coat with a little oil to seal. Give it a toss before stir-frying.
- Stir-fry until the beef just changes color, then immediately remove from the pan. Super tender!
