Slice the onion into strips, deseed the bell peppers and slice into strips, and slice the mushrooms. Set aside.

Heat a pan with a little oil. Stir-fry the onion until fragrant, then add the beef rolls and stir-fry over high heat until the color changes. Add the bell peppers and mushrooms, and continue stir-frying. Pour in the sauce mixture and stir-fry until the vegetables are just tender and the sauce has slightly thickened, evenly coating the meat. Remove from heat and let cool.

Lay a tortilla flat on a cutting board. Place the black pepper beef and vegetable filling in the center-lower portion. Generously top the filling with shredded mozzarella cheese — this is the key to the stretchy, rich texture.

Fold the bottom edge of the tortilla up over the filling, then fold in both sides toward the center. Roll up tightly to seal, ensuring no filling leaks out.

Oven / Air Fryer Method: Wrap each rolled wrap tightly in aluminum foil (to retain moisture and ensure even heating). Bake in a preheated oven at 180°C for 5-8 minutes, or air fry at 160°C for about 5 minutes, until the cheese is fully melted. Stovetop Method: If you prefer not to use the oven, place the foil-wrapped wraps in a pan over low heat and toast on both sides until the cheese softens.
