  1. Place pork ribs in cold water with ginger, scallion, and cooking wine. Boil to remove blood foam, then wash clean.
  2. Fry the pork ribs until golden brown and set aside.
  3. Melt rock sugar over low heat until it becomes syrup.
  4. Add the ribs and stir to coat with color. Add ginger slices, 2 tablespoons each of light soy sauce and vinegar, salt and sugar to taste.
  5. Add water to cover the ribs, simmer on medium-low heat for 30 minutes.
  6. Reduce sauce on high heat, add pineapple and stir well. Top with white sesame seeds and scallion.
