Pineapple Pork Ribs

Instructions
- Place pork ribs in cold water with ginger, scallion, and cooking wine. Boil to remove blood foam, then wash clean.
- Fry the pork ribs until golden brown and set aside.
- Melt rock sugar over low heat until it becomes syrup.
- Add the ribs and stir to coat with color. Add ginger slices, 2 tablespoons each of light soy sauce and vinegar, salt and sugar to taste.
- Add water to cover the ribs, simmer on medium-low heat for 30 minutes.
- Reduce sauce on high heat, add pineapple and stir well. Top with white sesame seeds and scallion.
