Made these for my three kids and they inhaled the whole plate. The blanching step with the cooking wine really does take away that gamey taste — same trick I use with chicken for caldo. Skipped the extra oil like the recipe said and the wings still came out glossy and sticky. Four stars because I wanted a little more sauce left over for rice.

Made this for the kids after soccer practice and the whole head of garlic fried golden had my kitchen smelling better than any Sunday. The butter and oyster sauce finish makes the beef cubes so tender my youngest kept stealing them off the plate. One spoon less black pepper next time for the little ones, but honestly, this is going in my permanent rotation.

Made this last Sunday instead of my usual pozole and my kids actually went quiet at dinner, which never happens. The rock sugar caramel step took me back to toasting chiles for mole—same patience, same payoff. Only docked a star because my clay pot runneth over and I lost some broth to the stovetop.

Made this for the family tonight and the bean curd sticks surprised me — they soak up all that oyster sauce flavor like little sponges. I let them simmer a few extra minutes because we like them softer, kind of like how I do with hominy in my pozole. Definitely making this again, maybe with extra cilantro from the garden.

Caramelizing the rock sugar to that deep jujube-red color reminded me of making a good mole colorinho — you can't rush it or it turns bitter. My potatoes soaked up all that braising liquid beautifully. Docking one star only because my kids pick around the whole spices, and fishing out the star anise took a minute.

Made this with flank steak for the fam and the velveting trick really works — my kids who normally pick around beef actually asked for seconds. Wish I'd had a bigger wok because everything got a little crowded, but the scallion-ginger water step is going in my permanent rotation, right next to my abuela's shortcuts.

Marinating the beef ahead is such a smart move—felt like my kind of prep-ahead trick, kind of like getting masa ready the night before. The snap peas and carrots made it a full meal for my kids, and the beef stayed tender. Only wish I'd had bird's eye chiles on hand for a little more kick.

Made this as a light side for Sunday dinner and the hot oil over the garlic and chiles reminded me of finishing a salsa macha — smelled amazing. Next time I'd pull the broccoli out of the blanch water a minute earlier to keep it extra snappy, but the dressing is a keeper.
