A delicious Waterless Salmon & Vegetable Pot (1 Serving) recipe.
Cut zucchini and pumpkin into chunks. Slice red bell pepper and white onion into strips. Mince the garlic.
Cut salmon into chunks and lightly marinate with black pepper, salt, and olive oil. Heat a pan over medium-high heat with a little oil, then sear the salmon skin-side down until golden (about medium-rare). Remove and set aside.
Sauté the onion and garlic in the same pan. Add the remaining vegetables and stir-fry. Season with black pepper salt.
Cover with a lid and cook over low heat for 3 minutes to let the vegetables release their moisture. Add the salmon back in and cook over low heat for no more than 5 minutes (check occasionally to make sure nothing burns). Plate and serve. (Note: zucchini was accidentally omitted in the photo.)
