Heat oil in a wok over medium-low heat. Pour in the beaten eggs and let them set slightly while still runny in parts. Gently push the eggs around so the uncooked liquid flows to the edges. Just before fully set, break the eggs into pieces and set aside.

Leave a thin layer of oil in the wok. Add the julienned onion and stir-fry until softened. Sprinkle in a pinch of salt and a splash of water, then stir-fry briefly.

Return the cooked eggs to the wok and stir everything together. Add a dash of light soy sauce to taste, stir-fry until well combined and the sauce is absorbed, then serve!
