I used too much flour — reduce the amount if cooking for fewer people. The more eggs, the tastier!


Add water in small increments, stirring into a slightly runny batter. Add a pinch of salt and taste for seasoning. (Raw flour is safe to taste.)


Heat the pan and lightly spray with oil. Use a spatula to gently spread the batter into an even, thin layer.


After flipping, lift an edge with the spatula to check. When both sides are golden brown, it’s done — roughly 30 seconds per pancake.
