A delicious Quick Breakfast: Scallion Pancake Sandwich recipe.

Heat a pan with oil and arrange ham slices in the pan. Crack 2 eggs into a bowl, add a pinch of salt, and beat well. Pour the egg mixture over the ham — pour slowly so you don’t scatter the ham slices.

Cook until the egg is just barely set. Don’t overcook, or the scallion pancake won’t stick to it.

Place the scallion pancake on top and press down gently so it makes good contact with the egg.

Cook for a bit longer, then gently shake the pan. When the bottom slides freely, flip the whole thing over.

Fry the pancake side for about 1 minute. Use chopsticks or a spatula to peek underneath — once it’s cooked through, add lettuce and squeeze on some ketchup if you like. Fold in half.
