Low-Fat Salmon & Vegetable Medley
Ingredients
- 1 salmon fillet
- as needed Brussels sprouts
- 3 baby carrots
- as needed pumpkin
- as needed bell pepper
- as needed onion
- as needed black pepper
- as needed salt
Instructions
- Wash the vegetables and pat the salmon fillet dry with paper towels.
- Cut the vegetables into chunks. Season the salmon with black pepper and let it marinate for 1–2 minutes.
- Heat a pan with a little oil over medium heat. Sauté the onion briefly, then add the salmon and the rest of the vegetables. Squeeze in a little lemon juice for extra flavor (optional). Season with black pepper and salt. Pan-sear the salmon until cooked through on both sides, and cook the vegetables until just tender-crisp.
- Serve alongside toasted European-style bread. Garnish with a few chicory leaves for color, and drizzle with a bit of fat-free mustard dressing for extra flavor (optional). Enjoy your healthy, low-fat meal!
