A delicious Beef and Carrot Pan-Fried Dumplings recipe.

Main ingredients: 300g ground beef, 3 small carrots, onion. Seasonings: salt, sugar, chicken bouillon, oyster sauce, soy sauce, dark soy sauce, sesame oil, white pepper powder, thirteen-spice powder, Sichuan peppercorns, scallion whites, ginger.

Heat oil in a pan, add diced onion and cook until lightly golden and fragrant. Add the onion oil to finely chopped carrots and stir-fry (carrots are fat-soluble vegetables — cooking them in oil enhances nutrient absorption). Let the mixture cool down.

To the ground beef, add salt, a pinch of sugar, a pinch of chicken bouillon, oyster sauce, soy sauce, a generous amount of white pepper powder, and a splash of dark soy sauce for color. Put on gloves and mix thoroughly until well-seasoned.

After mixing well, gradually add the pre-made Sichuan peppercorn-scallion-ginger water in 3–4 batches, stirring vigorously in one direction each time. After 3–4 rounds of adding water and stirring, the filling should become slightly sticky. Drizzle in sesame oil and stir once more.

Combine the cooled onion-carrot mixture with the beef filling and mix well. If you like scallions or scallion greens, chop them and place on top — mix them in right before assembling for the freshest flavor.
