A delicious Braised Beef Brisket recipe.


Place the beef in cold water and bring to a boil to blanch. Keep the lid off the entire time. Once the water boils, remove the beef and rinse off the scum with hot water — make sure to use hot water, not cold.

Use a generous amount of oil. Add the scallions, ginger, and garlic to cold oil. Sauté until lightly golden.

Over medium heat, add the star anise, cassia bark, bay leaves, black cardamom husk, Sichuan peppercorns, and fennel seeds. Stir-fry about 10 times, then add the chopped dried chilies and doubanjiang. Fry until fragrant, being careful not to burn the paste.

Add the beef and stir-fry until the moisture is released, then pour in 500 ml of boiling water.
