Cover with a lid and reduce the sauce over medium-high heat. If you prefer the yolks more set, simmer for an extra 2 minutes; if you like runny yolks, 2 minutes is enough. Adjust based on your own stove heat.

Finished dish — it really goes great with rice! Personally I eat very light, so I found it a bit too salty and sweet. You can halve the sugar, ketchup, and soy sauce if you prefer a milder flavor.
