A delicious Spicy Braised Pork Ribs recipe.

Rinse the fresh pork ribs and place them in a pot. Add water, scallions, ginger, and cooking wine. Blanch for 10 minutes, then remove and rinse several times with warm water.

Return the ribs to the pot. Add light soy sauce, dark soy sauce, ginger slices, cinnamon stick, Sichuan peppercorns, bay leaves, rock sugar, dried chili peppers, beer (1 bottle), and enough hot water. Bring to a boil, then cover and simmer for about 30 minutes. Remove the ribs and reserve one bowl of the braising liquid.

Heat oil in a pan and sauté ginger, garlic, and bird’s eye chilies until fragrant. Add oyster sauce and chili powder, stir briefly. Add the ribs and toss to coat.

Pour in the reserved braising liquid. Season with salt and ground Sichuan pepper. Stir-fry until the sauce is mostly reduced, then add the green chili peppers and toss until evenly combined. Serve immediately!
