A delicious Beef Steamed Dumplings recipe.
Mix 500g flour with 170g hot water and 130g cold water. You can also try using all hot water. Stir until combined, then let rest for 30 minutes. Knead again until the dough surface is smooth.

Grind the beef using a meat grinder. Add shiitake soaking water in 3 batches, about 4 tablespoons each time. If the mixture seems too dry, you can increase to 5–6 tablespoons per batch. Season with light soy sauce, oyster sauce, sesame oil, salt, and white pepper.
