## Ingredients
1. Beef — 200g (cut and marinate ahead)
2. Potato — 1 (diced)
3. Carrot — 1/2 (diced)
4. Broccoli — as needed (blanched)
5. Scallions — as needed
6. Beef Marinade — 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, black pepper to taste, 1 tbsp cornstarch; mix well, then add 1 tbsp oil and marinate for 10 minutes
7. Sauce — 1 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp cornstarch, a splash of water; stir until smooth
## Instructions
### Step 1
Mix 1 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp cornstarch, and a splash of water until smooth. Set aside.
### Step 2
Dice the beef (you can also slice or cut into strips — smaller pieces absorb more flavor). Add 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, and 1 tbsp cornstarch. Mix well, then drizzle in 1 tbsp oil and marinate for 10 minutes.
### Step 3
Dice the carrot and potato. Heat a wok with cold oil — once hot, add the carrot and potato dice. Pan-fry until lightly golden, then remove and set aside.
### Step 4
Again, heat the wok with cold oil. Toss in the scallions and stir until fragrant, then add the beef and stir-fry until it changes color.
### Step 5
Return the carrot and potato to the wok. Pour in the prepared sauce and stir-fry until the sauce thickens and coats everything evenly.
### Step 6
Add the blanched broccoli and toss until everything is well combined. Serve immediately and enjoy!
### Step 7
Here’s the finished dish — look at that glossy sauce!
### Step 8
Hard not to crave another bite…
### Step 9
Just one more spoonful…
### Step 10
Dinner is served!
## Tips
Always start with a hot wok and cold oil — this prevents the beef from sticking. Quick stir-frying over high heat keeps the beef tender and juicy. Make sure to use high heat when cooking the beef!
