Transfer to a clay pot and simmer over medium-low heat for at least 30 minutes, until the pork is tender and the tofu has absorbed the flavors.

In the last 5 minutes, increase the heat to reduce the sauce. Optionally add chicken bouillon before serving. (I also added a spoonful of cashew and chili sauce at the end — skip if you don’t like spice.)
