A delicious Dry Pot Beef recipe.

Slice the beef into thin strips. Marinate for 15 minutes with 1 tbsp light soy sauce, a splash of dark soy sauce, oyster sauce, and white pepper powder.

Prep the vegetables: slice the onion into strips, cut the potatoes into crinkle-cut strips, chop the garlic, ginger, fresh millet chilies, and dried red chilies. Cut the garlic sprouts into sections and roughly chop the cilantro.

Heat oil in a wok and quickly stir-fry (velvet) the marinated beef until just cooked through. Remove and set aside. In the same pan, fry the potato strips until golden brown and crispy, then remove.

Using the remaining oil, sauté the garlic, ginger, Sichuan peppercorns, dried red chilies, fresh millet chilies, and hot pot base until fragrant and the oil turns red.

Return the beef and fried potatoes to the wok. Drizzle with light soy sauce, sprinkle in chicken bouillon powder and cumin powder. Stir-fry to coat everything evenly.

Add the onion strips, cilantro, and garlic sprouts. Toss over high heat until just wilted.

Sprinkle with white sesame seeds, give a final toss, and transfer to a dry pot serving dish. Serve hot.
