A delicious Low-Fat Quick Breakfast | Homemade Little Red Riding Hood Sandwich recipe.

Prepare all ingredients. The original Little Red Riding Hood sandwich uses focaccia, but you can substitute with the popular ciabatta or baguette.

Preheat the air fryer. Spritz room-temperature ciabatta with a little water and toast at 180°C (350°F) for about 3 minutes. If you’re worried about it drying out, loosely wrap it in aluminum foil. Frozen ciabatta will need a longer reheating time.

Heat oil in a pan, add the bell peppers and stir-fry until softened. Season with black pepper salt. Raw bell peppers have a quite pronounced peppery flavor, so I recommend cooking them until nice and soft — taste as you go!

Once everything is prepped, it’s time to assemble the sandwich! Pastrami can be eaten cold, or briefly warmed in the microwave or on a skillet.

Squeeze Heinz mayonnaise onto the toasted ciabatta and spread evenly. This mayonnaise has a higher egg yolk content for a rich, creamy, savory flavor with a wonderful egg aroma! The built-in piping tip creates a pretty star pattern — adding a little ceremony to your everyday breakfast.

Spread the mayonnaise evenly, adjusting the amount to your liking. Heinz mayonnaise is rich in Omega-3 polyunsaturated fatty acids — delicious and nutritious for the whole family.

Start assembling the sandwich: layer lettuce as the base, add arugula, place the cheese slice, layer on the pastrami, top with the sautéed bell peppers, and cap with the other half of bread. I’m a big arugula fan — love its unique peppery aroma. If arugula isn’t your thing, substitute with endive or just use all lettuce.

One bite and you get crispy ciabatta, juicy bell peppers, crunchy greens, savory pastrami, and that soulful Heinz mayonnaise. One bite to wake up your morning energy!

I’ve been really into bell peppers lately, especially when sautéed until soft and juicy — just a simple seasoning of black pepper salt is all you need. Paired with Heinz mayonnaise, it’s a quick, low-fat, and nutritious breakfast!
