A delicious Blanched Squid with Bean Sprouts and Chives recipe.
Bring a pot of water to a boil, add oil and salt. Blanch the bean sprouts for 1 minute, then the chives for 30 seconds. Remove both and set aside.

Clean the squid (remove ink sac, eyes, and beak). Cut into crosswise sections. Slice scallions and ginger into strips, and layer them over the squid. Drizzle with a little cooking wine. Add ginger slices and cooking wine to the steaming water, then steam the squid for 5 and a half minutes.
Prepare julienned scallions. Heat oil (in a pan or microwave). Once the squid is done steaming, discard the scallion and ginger on top and pour out the liquid. Transfer the squid to the blanched bean sprouts and chives, then top with the scallion juliennes.
Pour hot oil over the scallion juliennes to cook them through. Warm the steamed fish soy sauce slightly, then drizzle it evenly over the squid. Serve!
