A delicious Spicy Stir-fried Frog Legs recipe.

Rinse the cleaned frog legs thoroughly with water. Cut off the webbed feet, then use the back of a knife to crack the hard bones. Pat dry with paper towels.


Season the wok with oil first, then pour it out and add fresh cold oil. Sprinkle salt over the bottom, then add the frog legs. Do not move them — pan-fry over medium-low heat for about 1 minute to evaporate moisture. Flip and continue frying until both sides are lightly golden. Remove and set aside.

Leave the base oil in the wok. Add ginger, garlic, and bird’s eye chilies. Stir-fry until fragrant.

Return the frog legs to the wok and toss well. Splash rice wine along the edge of the wok to deglaze and remove any gamey smell. Add light soy sauce, a splash of dark soy sauce for color, and a pinch of chili powder. Stir-fry vigorously over high heat until the sauce becomes aromatic.

Pour in a bowl of boiling water and cook over high heat for 3–4 minutes. When the liquid has reduced to a small amount of sauce, add the green and red peppers and white pepper. Toss over high heat and serve immediately.
