Soy Sauce Cucumber Pickle
Ingredients
- 3 Cucumber
- to taste Ginger
- to taste Garlic
- a little Bird's Eye Chili
- 2 tbsp Salt
- to taste Sichuan Peppercorn
- 2 tbsp Sugar
- 3 tbsp Light Soy Sauce
- 4 tbsp Vinegar
Instructions
- Smack cucumbers with the flat side of a knife, then break into irregular pieces.
- Sprinkle with salt, let sit 5 minutes, then drain excess water.
- Mix soy sauce, vinegar, sesame oil, sugar, garlic, and chili oil.
- Pour dressing over cucumber, toss well.
- Serve immediately or refrigerate 10 minutes for more flavor.
