1. Add enough water at the start — do not add more midway. If using less meat, don’t add too much water. 2. About the meat choice: I used Australian boneless beef rib strips. I’ve also tried fresh beef ribs from the market — bone-in ribs produce a cloudier broth and the texture isn’t as good as the boneless rib strips.
