Hand-Shredded Beef Jerky
Ingredients
- 2 Beef (top round/sirloin)
- 50g Onion
- 30g Cilantro
- 30g Celery
- 30g Carrot
- 30g Garlic
- 6 Bay leaves
- 3g Sichuan peppercorns
- 2g Cumin seeds
- 2 Star anise
- 2g Angelica root (bai zhi)
- 3g Salt
- ⚠️ Above ingredients are for the first marinade
- 20g Light soy sauce
- 20g Oyster sauce
- 10g Sugar
- 10g Cumin powder
- 1g Five-spice powder
- 5g Salt
- to taste White sesame seeds
- to taste Chili flakes
Instructions
- Cut 2 jin of beef top round into strips about the thickness of a thumb.
- Prepare the vegetables needed for the first marinade.
- Prepare the spices needed for the first marinade.
- Place the cut beef in a large bowl, add all the vegetables and spices.
- Mix well, cover with plastic wrap, and refrigerate for 6–8 hours to marinate.
- Prepare the second marinade: 20g light soy sauce, 20g oyster sauce, 10g sugar, 10g cumin powder, 1g five-spice powder, 5g salt.
- Remove the residue from the first marinade, add the second marinade, along with chili flakes and white sesame seeds.
- Mix well and marinate for another 30 minutes.
- Air fry at 200°C (400°F) for 15 minutes, replace the parchment paper, flip, and air fry for another 15 minutes.
- The jerky is done when the outside feels firm to chopsticks but still slightly soft when squeezed.
- The finished beef jerky tastes amazing — my daughter ate several pieces in one sitting!
