A delicious Stir-fried Zucchini with Beef recipe.
Slice the zucchini into rounds, sprinkle with salt and let sit for 10 minutes to draw out excess moisture.

Slice the beef against the grain (Bavette steaks work well). Marinate with black pepper and light soy sauce for 5–10 minutes.
Heat a wok with oil over high heat. Add the beef slices and stir-fry until just changed color, about 1 minute total. Remove and set aside.
Drain the liquid drawn out from the zucchini. Heat oil in the wok, add minced garlic and fry until fragrant. Add the zucchini and stir-fry for a moment. Add 1 tablespoon light soy sauce and ½ tablespoon oyster sauce, and toss well.

Return the beef to the wok. Add a splash of dark soy sauce and continue stir-frying. When nearly done, mix a small bowl of cornstarch slurry, pour it into the wok, and reduce the sauce over low heat until thickened.
