Cod and Tofu Stew
Ingredients
- 1 cod
- 1/2 tofu
- 2 scallion
- 3 ginger slices
- 4 dried chili peppers
- 1 light soy sauce
- 3 sugar
- 5 salt
- 4 white pepper powder
- 2 matsutake powder
- 1 cooking wine
Instructions
- Clean the cod and cut into sections. Cut the tofu into cubes.
- Bring a pot of water to a boil, add 1 tbsp cooking wine. Once boiling, add the cod and blanch for 30 seconds, then remove and set aside.
- Heat oil in a wok over high heat. Add scallion, ginger slices, and dried chili peppers; stir-fry until fragrant.
- Add boiling water to fill the wok halfway and bring back to a boil.
- Add the cod and tofu, 1 tbsp light soy sauce, 3g sugar, and 5g salt. Simmer over medium-low heat for 20 minutes.
- Just before finishing, add 4g white pepper powder and 2g matsutake powder.
- Done — the broth is rich and savory!
