  2. Separate the egg yolks from the egg whites.
  3. Heat the oil until it begins to shimmer.
  4. Pour the hot oil into a bowl.
  5. Sift in the cake flour and stir until smooth.
  6. Add the milk and mix well.
  7. Add the egg yolks and stir to combine.
  8. Mix until the batter is smooth and uniform.
  9. Begin beating the egg whites with an electric mixer.
  10. Add the first portion of sugar.
  11. Add the second portion of sugar.
  12. Add the third and final portion of sugar.
  13. Continue beating until stiff peaks form.
  14. Fold the meringue into the yolk batter in portions.
  15. Gently fold together until just combined.
  16. Fold until the batter is homogeneous — do not overmix.
  17. Pour the batter into the prepared cake pan.
  18. Tap the pan gently on the counter to release air bubbles.
  19. Bake until golden and a toothpick comes out clean.
  20. Let cool slightly, then slice and enjoy!
