Sponge Cake
Ingredients
- 6 eggs
- 80 caster sugar
- 80 cake flour
- 80 milk
- 50 corn oil
Instructions
- Prepare all ingredients.
- Separate the egg yolks from the egg whites.
- Heat the oil until it begins to shimmer.
- Pour the hot oil into a bowl.
- Sift in the cake flour and stir until smooth.
- Add the milk and mix well.
- Add the egg yolks and stir to combine.
- Mix until the batter is smooth and uniform.
- Begin beating the egg whites with an electric mixer.
- Add the first portion of sugar.
- Add the second portion of sugar.
- Add the third and final portion of sugar.
- Continue beating until stiff peaks form.
- Fold the meringue into the yolk batter in portions.
- Gently fold together until just combined.
- Fold until the batter is homogeneous — do not overmix.
- Pour the batter into the prepared cake pan.
- Tap the pan gently on the counter to release air bubbles.
- Bake until golden and a toothpick comes out clean.
- Let cool slightly, then slice and enjoy!
