Tiramisu Cream Cheese Cookies
Ingredients
- Cookie Dough:
- 140 unsalted butter
- 65 powdered sugar
- 45 whole egg
- 10 coffee liquid
- 215 cake flour
- 15 cocoa powder
- Tiramisu Cream Cheese Filling:
- 70 cream cheese
- 10 caster sugar
- 35 heavy cream
- 4 coffee liquid
Instructions
- Make the cookie dough: Beat softened butter and powdered sugar until smooth. Add whole egg in two additions, beating well after each until fully absorbed. Mix in the coffee liquid. Sift in cake flour and cocoa powder, then fold until no dry flour remains and a dough forms.
- Divide the dough into 30 g portions and roll into balls. Use a tool to press a well/indentation into each (as shown). Bake in a preheated oven at 170°C for 20 minutes. Let cool completely after baking.
- Make the tiramisu filling: Beat cream cheese and sugar until smooth. Add heavy cream and beat until smooth. Mix in the coffee liquid. Pipe the filling into the center of each cooled cookie. Dust the top with cocoa powder.
