A delicious Air Fryer Roasted Sea Bass recipe.

Clean the sea bass, pat dry, and cut into chunks. In a bowl, combine 3 tbsp light soy sauce, 1 tbsp oyster sauce, a pinch of sugar, 1 tsp white pepper powder, and 1 tbsp cooking wine. Add the fish chunks and toss to coat evenly. Sprinkle in 2 tbsp cornstarch and mix well.
Boil the Sichuan peppercorns in a small amount of water, then heat oil in a pan and briefly fry the drained peppercorns until fragrant. Pour the hot peppercorn oil over the marinated fish. Let marinate for 30 minutes or more.
Preheat air fryer to 180°C (356°F). Arrange the marinated fish chunks in the basket in a single layer. Air fry for 25 minutes, flipping halfway through. If a crispier finish is desired, extend cooking time by a few minutes.
