- Slice beef thinly against the grain for tenderness
- Prepare the marinade: mix light soy sauce, oyster sauce, and Shaoxing wine
- Add cornstarch to the marinade and mix until smooth
- Coat beef slices evenly with the marinade
- Add a splash of oil to seal in the moisture, mix well
- Let marinate for at least 15-20 minutes at room temperature
- Heat wok until smoking hot with plenty of oil
- Quick-fry beef slices in batches, stir-frying rapidly for 30-60 seconds
- Remove beef immediately when color changes, do not overcook
- The beef should be tender, juicy, and slightly crispy on the edges
- Serve immediately with rice or as part of a stir-fry dish
