A delicious Crispy Roasted Spanish Mackerel (Air Fryer) recipe.

Heat a dry wok, add salt, Sichuan peppercorns, star anise petals, and bay leaves. Toast over low heat until lightly golden.

Butterfly the mackerel by cutting along the central bone into 2 fillets. Rub the toasted spice mixture evenly on both sides. Lay ginger slices on top.


Wipe off the spice residue with paper towels and pat the fish dry. Spray a flat pan with peanut oil (3 sprays) and pan-sear both sides until lightly charred.

Transfer to the air fryer. Sprinkle a thin layer of BBQ seasoning and white sesame seeds. Air fry at 210°C for 7 minutes.
